Are microgreens miraculous? Inconveniences and challenges in growing and consuming microgreens

We’ve always spoken wonders about our little green friends, but the reality is that behind their apparent simplicity, there are several inconveniences and challenges that we must address and cannot ignore. Although we may call them problems or drawbacks, the truth is that most of them have potential solutions.

Let’s dive in!

Risk of contamination and health issues

One of the main drawbacks of microgreens is their vulnerability to microbiological contamination. Like sprouts, microgreens are generally consumed raw and are grown in warm, humid environments, ideal conditions for the development of pathogenic bacteria such as Escherichia coli or Salmonella, according to People’s Farm.

If proper hygiene practices are not maintained, whether in the substrate, irrigation, or handling, the final product can pose a risk to consumer health.

In addition, fungi and molds are frequent problems in production, as we’ve discussed in previous articles. According to Epic Gardening, high seeding density and poor ventilation encourage mold growth, especially in warm or humid climates. Produce Grower mentions that fungal diseases such as those caused by Pythium aphanidermatum can destroy entire trays of crops if humidity or seed quality are not properly controlled.

Limited shelf life

Another negative aspect of microgreens, one we’ve also mentioned before, is their short shelf life after harvest. Due to their fragility and high water content, microgreens begin to wilt and lose nutrients within just a few hours or days.
This requires a fast and refrigerated supply chain, which increases costs and complicates long distance distribution. For this reason, microgreens are often best suited for local markets or direct sales.

Nutritional limitations due to their small size

Although numerous studies highlight the high content of vitamins, antioxidants, and minerals in microgreens, their small size and low weight limit the total amount of nutrients obtained per serving. Therefore, microgreens should not be seen as substitutes for mature vegetables, but rather as a complement within a balanced diet.

Consumer acceptance challenges: distrust

From a commercial standpoint, microgreens also face challenges related to consumer acceptance. Their high price, resulting from production and transport costs, can limit accessibility. Moreover, their “delicate” appearance and short shelf life raise doubts about their practicality compared to more conventional vegetables.

For this reason, they are mainly targeted at younger audiences and consumers who follow healthy or organic lifestyles, rather than the majority of traditional buyers.

In summary

Although microgreens represent an innovative trend with multiple nutritional and culinary benefits, their production and commercialization also pose significant challenges. The main drawbacks are related to food safety, limited shelf life, sanitary risks, and a certain level of consumer skepticism.

As the market grows, research, consumer education, and improved hygiene practices will be essential for microgreens to become part of everyday diets.
