Arugula (rocket) microgreens: everything you need to know to grow them

Arugula (rocket) microgreens are a fast, peppery brassica that needs no soaking and is ready to cut in about 8-12 days. Here is how to grow and use them.

Arugula (rocket) microgreens are one of the quickest, most rewarding peppery greens you can raise on a windowsill, packing all the mustardy bite of mature rocket into a seedling barely a couple of centimetres tall. They belong to the brassica family (Eruca vesicaria sativa), germinate without any soaking, and are usually ready to cut in a little over a week. That mix of speed, strong flavour and low fuss is exactly why chefs keep them on the pass and why they make such a forgiving crop for a first-time grower.

Why grow arugula (rocket) microgreens

The headline reason is flavour. A pinch of rocket microgreens delivers a concentrated peppery, nutty hit that lifts a finished plate far more than their size suggests, which is why they are a staple garnish in restaurant kitchens. They are also fast and cheap: no soaking, no special equipment, and a harvest in roughly a week and a half from a handful of seed.

They are a genuinely easy starter crop, alongside other brassicas such as broccoli microgreens, and they slot neatly into a rotation of quick, reliable greens in our grow-at-home guides. The one honest caveat is the flavour itself: rocket is assertive, and grown warm or a little too long it can turn quite hot and bitter, so it is not to everyone’s taste.

How to grow arugula (rocket) microgreens step by step

  1. Start with the right seed. Use untreated, food-grade rocket seed. Rocket is often sold as agricultural seed for field planting and can be dressed with fungicide, which you do not want on something you eat raw — see our note on seed safety before you buy.
  2. Prepare the tray. Fill a shallow tray with 2–3 cm of moist compost or coir, then level and lightly firm the surface so seeds sit evenly.
  3. Sow dry and densely. Scatter the seed in an even, single layer with the seeds sitting almost shoulder to shoulder but not piled up. Growers vary from roughly 10 g up to 30 g for a standard 10 x 20 tray; a couple of teaspoons is about right for a small windowsill tray. Do not soak the seed — rocket is mucilaginous and turns to gel the moment it gets wet. Mist the surface to settle it.
  4. Blackout. Cover the tray to block all light for about 3–5 days. A light weight (or a second stacked tray) during the first couple of days improves seed-to-soil contact, though it is optional. Mist once a day so the surface never dries out.
  5. Uncover and give light. Around day four or five, once the stems are lifting the cover, move the tray into bright, indirect light. Do not worry if the greens look pale at first — rocket is slower than most crops to green up.
  6. Water from below. Once seedlings are standing, water into the base of the tray rather than over the leaves, keeping the medium consistently moist but never soggy. Good airflow and gentle watering are your best defence against problems; our watering guide covers the technique in detail.
  7. Grow on to harvest. Most trays are ready at 8–12 days, when the cotyledons have opened and the first true leaves are just appearing. A well-filled standard tray yields roughly 250–300 g.

Harvesting and storing

Harvest by gathering a handful of greens and cutting cleanly just above the soil line with sharp scissors. Cut when the cotyledons are fully open and the greens stand about 4–5 cm tall; leaving them a day or two longer for the first true leaves gives a stronger, more mustardy flavour. Try to harvest dry, as surface moisture is what shortens shelf life.

Store the cut greens unwashed in a sealed container in the fridge, with a sheet of kitchen paper to catch condensation, and use them within about five to seven days. Wash only just before eating — washing before storage can roughly halve how long they keep.

How to use them in the kitchen

Treat rocket microgreens as a finishing green rather than a cooking one: their bite fades and the leaves wilt with heat, so add them raw at the last moment. Scatter them over a pizza as it comes out of the oven, fold them through pasta, or pile them onto steak, grilled vegetables or a fried egg.

They shine in salads, sandwiches and grain bowls, and their pepperiness pairs beautifully with Parmesan, lemon, good olive oil, cured meats and soft goat’s cheese.

Common problems

  • Root hairs mistaken for mould. Fine white fuzz spread evenly around the base of the stems is almost always harmless root hairs. Mould, by contrast, is wispy and cobweb-like, sits on the seed coats or leaves, and often smells musty.
  • Actual mould and damping-off. These come from sowing too thickly, overwatering and stale air. Ease off the water, water from below, improve airflow and do not overcrowd the seed; our mould prevention guide walks through the fixes.
  • A slimy, gel-like surface. This is the seed’s natural mucilage reacting to too much water, not disease. Sow dry, never soak, and mist rather than drench.
  • Slow or patchy greening. Rocket greens up more slowly than many crops, so give it longer in the light before worrying; patchy stands usually trace back to uneven sowing.
  • Too hot to eat. If the flavour is overpowering, harvest earlier at the cotyledon stage and keep the tray on the cooler side, as warmth and age both intensify the heat.
