One guide per crop: how to grow it, how long it takes, how it tastes, what the science says and what to cook with it. Every guide follows the same structure, so once you have grown one of these microgreens varieties you can grow them all.
Every variety guide gives you the same information in the same order: an at-a-glance table (days to harvest, difficulty, flavour), step-by-step growing instructions, and safety notes where a crop needs them. Teachers use the guides as lesson material, home growers as tray-side instructions, and entrepreneurs as production references. All of it is free and open.
Twenty-six guides is a lot to face on day one. These four crops are the ones we hand to every beginner: they germinate reliably, they forgive mistakes, and between them they cover the whole range of colour, speed and flavour. Grow these and the method transfers to every other variety below.
What you need
Red amaranth is not only tasty, it also adds a striking pop of colour to your dishes — good in salads, sandwiches, or as a garnish.
What you need
Easy, tasty and quick — the best first tray if you want a result within days.
What you need
Broccoli microgreens contain glucoraphanin, which the body converts into sulforaphane when the leaves are chewed or chopped. Which compounds they carry, and by how much they differ from mature broccoli, depends on the cultivar and the growing conditions, so there is no single multiplier — see the full broccoli guide.
What you need
Radish microgreens are visually striking, with red stems against green leaves, and they are one of the fastest and most forgiving crops to start with.

Before anything germinates, you have to recognise what is in the bag. These are the seeds we grow most often, photographed the same way so you can compare size, shape and colour against whatever you have been sold.

Easy to grow and forgiving of mistakes; mild and nutty, with magenta stems that keep their colour on the plate.

Slower to germinate than most, and worth the wait — intense sweet-clove aroma and a strong basil flavour.

Reliable germinator, ready in 7 to 10 days; deep green leaves with a mild cabbage flavour.

Ideal for beginners — germinates reliably, grows fast, and tastes mild and crisp.

Big seeds that are easy to sow and easy to hull; thick crunchy stems and a nutty, slightly sweet taste.

Fast-growing pea shoots with great texture and flavour.

Quick-growing, mild and sweet — the usual choice for juicing.

Mild sweet-nutty flavour and tender green shoots.

Fast and forgiving — ready in 7 to 10 days, with a sharp peppery bite and red-stemmed leaves.

These guides are free to use in any classroom, youth group or Erasmus+ project — and there is almost certainly a hook for your field. Growing them yourself and stuck on a crop? Ask us a growing question — a real person who grows these in Athens will answer.
