Today we’re bringing you five tasty and refreshing salads with microgreens ideas, perfect for enjoying this summer. Two of them we discovered on TikTok, and the other three are our own creations. If you’re looking for new ways to incorporate these tiny but mighty greens into your meals, keep reading!
We found a recipe on TikTok from the creator @cookingwithnes_ that we absolutely loved. The salad includes:
• Green microgreens (to taste)
• Pomegranate
• Avocado
• Feta cheese
• Chocolate covered walnuts
• Salt and olive oil
What we liked most about this recipe is the sweet touch from the chocolate on the walnuts. It felt so original. We tried it and yes, it’s amazing!
Another idea we found online comes from @cultiveat, and it features an incredible combination of flavors and textures. It uses three different types of microgreens:
• Sunflower shoot (we’ve just started growing it ourselves!)
• Red garnet
• Green mustard
These are combined with:
• Sweet mango
• Crunchy radish
• Pistachios
They describe it as: “The mix of crunchy, tender, and slightly spicy microgreens creates a refreshing and appetizing salad base.”
Honestly, it looks amazing. We can’t wait to try it!
Now, on to our own ideas…
Our first suggestion includes simple but flavorful ingredients:
• Arugula
• Quinoa
• Mustard microgreens (for a spicy kick)
• Cheese of your choice (we used halloumi, delicious!)
• Raisins
• Salt and olive oil for seasoning
A balanced salad with a mix of spicy, sweet, and salty flavors.
This next option is inspired by the classic Caesar salad, with our own twist:
• Lettuce microgreens
• Diced chicken or turkey
• Cucumber
• Cheese of your choice
• Croutons
• Cherry tomatoes
• Sweet corn
• Honey mustard dressing
A fresh and filling option with the unmistakable Caesar flavor, now with microgreens.
We’ll wrap up with a salad idea that’s always a hit: pasta salad.
Ingredients:
• Radish microgreens, if you prefer a bold and spicy touch. Or, for a milder option, alfalfa microgreens work perfectly.
• Lettuce
• Macaroni
• Tuna
• Avocado
• Almonds
• Olive oil, vinegar, and salt for seasoning
An ideal choice for cold summer meals or for taking to the beach or work.
