  • Ingredients: sunflower microgreens, cherry tomatoes, cucumber, avocado, roasted pumpkin seeds, lemon juice, and a drizzle of extra virgin olive oil.
  • Instructions: chop the tomatoes and cucumber into small pieces, add diced avocado, and mix with the microgreens. Dress with lemon and olive oil, and top with crunchy pumpkin seeds.
